Protein is essential at the start of each day. Instead of the plain old scrambled eggs, try a Greek style omelette. A side of melon or sliced tomatoes makes a great compliment to this dish. I personally love the melon because it acts as a pallet cleanser and end point of the meal.


2 eggs

1-2 TBSP milk of choice

1/4 cup feta as needed

1/2 cup of spinach as needed

6 Kalamata Olives, pitted and sliced


Beat 2 eggs and mix in 1-2 tablespoons milk of choice

Cook on medium heat using oil or butter of choice.

Add spinach (up to 1/2 cup) in a thin layer  all over the egg mixture while omelette is cooking.

Spread feta cheese on 1/2 of the Omelette (up to 1/4 cup)

Fold over Omelette and continue cooking as needed.

When finished, sprinkle olives over top of Omelette.

This is my way of cooking an Omelette, but everyone has their different techniques. Do what works for you, and enjoy!
