Try this recipe for a small meal, side dish, or snack. Tomato Mozzarella Salad is always a great standby as it is full of flavor and offers fiber, protein, and fat, while keeping carbs to a minimum.
I received this recipe from my good friend, Susan, who is a speech therapist and a bit of a health nut herself. She made it today for her 4th of July Party, and it was gone in seconds.
1/4 cup olive oil
1/4 cup balsamic vinegar (Susan uses Trader Joe’s Balsamic, which has a tendency to color the mozzarella, but offers a great flavor)
1/2 tsp salt
Black Pepper to taste
1 clove minced garlic
3 TBSP chopped fresh basil
1/4 cup onion
1 1/2 cup mozzarella cheese balls (small or cut up large mozzarella balls into 1/4 inch pieces)
1 pint grape or cherry tomatoes
Mix together the first 5 ingredients for dressing, then toss in remaining ingredients.
Chill until served.
