Looking for a quick side dish? This one is easy and perfect for hot summer days.

Microwave, boil, or roast potatoes to soften. Cool completely. To cool down quickly try cutting cooked potatoes into 1/4 inch pieces and placing in the freezer for 10 minutes or so.

Add fresh basil, olive oil, salt, pepper, and garlic powder to taste. Amounts will depend on total size of the dish.

Slice fresh tomatoes such as cherry or sunshine yellow tomatoes in quarters and add immediately prior to serving to preserve freshness.

To make the salad even more appealing, use a variety of potatoes including purple, yukon gold, and red skin. Also try multicolored heirloom tomatoes for added sweetness and visual appeal.
