Tofu and Kale with Tahini Lime Sauce
A healthy vegan meal worth writing home about. Honestly, I bought Tahini to make hummus, only to find that I did not have any Chick Peas! I had never thought of any other use for it other than hummus. Oh was I wrong! There are so many wonderful recipes to be made with Tahini. For those of you who are not familiar with Tahini, it is nothing more than ground sesame seeds, which is full of healthy polyunsaturated and monounsaturated fats, not to mention flavor! Try this recipe below for a complete meal. The sauce can also be used on sandwiches, as a dip, on pasta, you name it.
Ingredients:
Extra Firm Tofu, drained, cubed
Fresh Baby Kale
Oil of choice for cooking (coconut preferred)
Garlic Salt to taste
Sesame seeds for garnish
Sauce:
¼ cup Tahini
Juice from ½ fresh lime
Salt to taste
2-3 Tablespoons water
Brown tofu using oil of choice
Wilt Kale in oil or water and sprinkle with garlic salt (lightly, more can be added later to taste)
Combine all ingredients for sauce. Lime juice will thicken sauce. Add water for desired thinner texture. May also try adding 1 tablespoon of Tamari for a different flavor.
In a bowl, gently mix cooked tofu and kale. Pour Tahini Lime sauce over top and sprinkle with sesame seeds to garnish. This particular photograph has gluten free pasta as well, which adds yet another texture to the mix.
